Vineyard:
A twelve-year-old vineyard standing on loamy soil with an east/west row direction and perfect exposure for ripening.
Climate:
Enough cold during the preseason ensured even budding. Moderate conditions prevailed for most of the harvest, with cool nights. Overall, the conditions are very good for ripening and harvesting.
Harvest:
The development of the grapes were meticulously monitored, and picked at the optimum ripeness during the first week of February. The grapes were night-harvested by machine. Production of 9000 litres per hectare.
Winemaking:
Grapes harvested at 20 B, destemmed, crushed, and only very clear juice are fermented with Vin13 yeast in stainless steel tanks at 14°C. After fermentation, the wine was racked of the lees, stabilised, carbonated, and bottled.
Tasting Notes:
Vibrant, salmon-coloured sparkling wine with prominent red berry flavours on the nose. A velvet palate showing subtle hints of cherries, ending with a lingering finish. Beautiful balance between the fruit and acidity in the taste. Ideal with salads and seafood.
